State where capacity is measured
Use kg/h or another agreed unit and name the measurement point. Whole-fruit input includes skin, stones and rejected material. Accepted flesh excludes those streams; a mixed recipe may add ingredients before packaging. A quotation should not silently move between these boundaries.
Separate hourly rate from daily output
Record operating hours, batch cycles, routine stops and cleaning. A front-end rate measured during steady running does not describe the number of filled packs produced over a complete day. List the mixing and filling schedule alongside the preparation target.
Use a representative recovery trial
Measure fruit, accepted flesh and waste from the same lot. Record variety, condition and preparation method. Use those observations to discuss sizing, then agree how performance will be assessed with the supplier. Do not substitute an assumed percentage for the trial.
Send a comparable quotation brief
Include your finished product, raw-material form, texture specification, capacity boundary, package, utilities and existing equipment. Ask each proposal to identify the supplied modules, external interfaces and acceptance conditions. This makes differences in price and scope easier to assess.
