Protecting texture from recovery to the pack

The final texture is created by the complete line. Selecting a cutter or finisher is only one part of the decision.

Smooth and chunky require different paths

A smooth-puree route may need finishing to meet an agreed fibre or grit specification. A chunky base needs a controlled particle profile and bypasses that fine-finishing operation. Recipe use determines the right endpoint.

Define the measurement, not a marketing adjective

For smooth product, provide a reference sample and a consistency test with sample temperature. For chunky product, state the largest permitted piece, the target size range and the retained fraction. Use the same method at each trial point.

Treat the pump and pipework as a system

Measure viscosity at the expected operating conditions, then consider inlet head, pipe length, bends, elevation and downstream backpressure. For particles, check passages through the pump, valves and filling nozzle. A water-duty figure is not a product-duty figure.

Find where the product changes

Compare samples after cutting or finishing, after mixing, after pumping and after preservation or thawing. If particles disappear after transfer, adjusting the cutter alone will not solve the loss. Investigate speed, recirculation, valve restrictions and recipe firmness.

Document the acceptance window

Agree texture and product-temperature limits with sample collection points. Define permitted recirculation and hold time, and a response to line stoppages. Include cleanup and restart losses in the capacity discussion.
