Engineering guide / yield material balance
Avocado processing yield and material balance
Yield is a measured result for a defined lot and process, not a universal percentage. A material balance shows where the mass goes and which loss is worth attacking.
01
Name the boundary
Whole-fruit input includes skin, stones and rejected tissue. Accepted flesh is the edible material released after preparation. Finished product may include recipe additions and later losses. Each number needs a measurement point and a time period.
| Stream | Where to measure | What it tells you |
|---|---|---|
| Whole fruit | Preparation inlet | Capacity and purchased mass |
| Accepted flesh | After inspection | Recoverable food material |
| Skin / stones | Separate discharges | Preparation performance |
| Rejected tissue | Inspection point | Fruit quality and handling |
| Finished product | After filling | Saleable output |
02
Weigh every stream
Use the same batch to weigh whole fruit, accepted flesh, skin, stones, rejected tissue and finished product. Include samples and product left in the line where practical. A balance that does not close points to an unmeasured stream or a recording error.
03
Separate quality loss from mass loss
A high peel stream may look like a yield problem but be normal for the fruit. A high reject stream may indicate ripeness or handling issues. Inspect the streams, not only the weights.
04
Do not confuse recovery with saleable yield
Recipe additions increase mass; filling and changeover losses reduce saleable output. Report recovery, finished-product mass and pack count separately. A single “yield” number hides the differences.
05
Use the balance to choose the next improvement
If preparation loses the most acceptable flesh, change the preparation method or fruit window. If filling loses more, fix the filler or changeover. The balance should direct investment, not just report a percentage.
