Engineering guide / browning oxygen control trial
Avocado Browning and Oxygen Exposure Trial
Compare avocado colour at named process handovers with fixed exposure and observation methods.
01
Define the reference sample
Use the same incoming lot and product formulation for comparison. Record sample temperature, preparation time, container/headspace and the agreed colour measurement or reference photograph method.
| Record field | Project entry |
|---|---|
| Lot and recipe reference | To be recorded |
| Opening / recovery / filling times | To be recorded |
| Sample temperature | To be recorded |
| Colour method and reference | To be recorded |
| Container / headspace / storage | To be recorded |
| Observed change and reviewer | To be recorded |
02
Track exposure across the line
Time the interval from opened fruit to recovery, mixing and filling. Label samples at each handover and record transfer or vacuum conditions where used. Colour at the mixer does not establish the colour after storage.
03
Agree the review period
Set the sampling times and storage conditions with the product owner. Record the observations without converting an unvalidated short trial into a shelf-life claim.
04
Complete a blank project record
Use the downloadable avocado trial worksheet to record your own observations. No values are prefilled or represented as measured factory data.
